The evergreen Kokam or Garcinia Indica tree is native to the Western Ghats, Kokan region, and Goa, and bears a fruit with multiple uses. The Kokan Bazar Kokam Agal medicinal powerhouse is packed with vitamins A, B3, C, iron, magnesium and potassium, and makes the perfect all-season hydrating sherbet. Kokam Agal, the pure unsweetened juice extracted from the Kokam tree, is added to saar (soup), while the rind is sundried and used as tempering in vegetables and for a touch of tanginess to amti (dal).
